What Exactly is Cold Pressed Olive Oil?

Cold pressing is, by definition, from a single garden, early harvest of olives without falling down on the ground, grinded in the stone mill together with the beans, and then crushed in wicker sacks. When using this method, the water given does not exceed 27 degrees, if it does, there will be no cold pressing. Since the oil produced by this method leaks through the mats, it is also called extra virgin olive oil.

This method is not suitable for factory production

Because cold pressing is the first crop and there is no method to collect this much crop and produce oil from it industrially. Cold squeezing is a method that can only be done by traditional and small-scale producers, a crop is produced without mixing with another crop and immediately squeezed. Therefore, a system where many crops are mixed, kept and produced in series is not cold press. The taste of the product varies.

Another factor is heat

Olive oils produced by heating above 27 degrees lose their antioxidant properties and actually cease to be olive oil. Cold pressing means getting less oil from olives. The higher the temperature, the higher the oil taken from the crop, the lower its quality. Since cold press is extracting oil from the first crop by pressing, a factory must take the first crop from thousands of regions one by one to make cold press, and cold press it with traditional methods. This is not possible in terms of cost, therefore extra virgin olive oil is not an industrial product, its production does not allow it.

Olive oil is actually a juice. Can you see the very freshly squeezed orange juice on the shelves? No! The natural extra virgin 0.5 acid olive oil you see on the shelves of the market is not actually cold pressed natural olive oil. They are oils obtained from mixed crops, increased in volume and reduced acidity by being heated at +200 degrees in the factory. They do not have the beneficial properties of olive oil.

What to do?

It should be bought from a small, local, familiar and traditional manufacturer. While doing this, hygiene conditions should be investigated well. Plastic, open bins should be avoided, roadside, under the sun sellers should be avoided. If possible, closed canned clean products should be preferred.
